Traditional xiao long bao gets its soup from pork aspic — stock set with gelatin, folded into the wrapper, melted by the steam. Ours does the same thing without a single animal ingredient. A slow-simmered mushroom and kombu broth, set with agar, wrapped in a hand-rolled skin and pleated to order. When you lift one, it pours.

Vegan xiaolongbao is a plant-based version of the Shanghainese soup dumpling — a thin hand-rolled wrapper filled with a savory filling and a set broth that melts into soup as it steams. Ours replaces the traditional pork and gelatin with a mushroom-kombu broth set with agar.

Is xiao long bao the same as a soup dumpling?

Yes. Xiao long bao is the Mandarin name; soup dumpling is the common English translation. Both describe the same dish — a pleated dumpling steamed in a bamboo basket with broth sealed inside.

What are the ingredients in your vegan xiao long bao?

Hand-rolled wheat wrappers, a filling of tofu, shiitake and seasonal vegetables, and a broth of shiitake, kombu and aromatics set with agar. No pork, no chicken stock, no gelatin, no egg — every ingredient is plant-based.

How do you make the soup inside without gelatin?

The broth is simmered for several hours, then set with agar — a seaweed-derived gelling agent — until it is firm enough to fold into the wrapper. Steam melts it back to liquid, which is why the dumpling pours when you open it.
